Delicious and refreshing homemade strawberry ice cream made with fresh strawberries and a creamy base.
Ingredients

- 2 cups fresh strawberries (hulled and sliced)
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon vanilla extract
- Pinch of salt
Instructions
- Prepare the Strawberry Mixture: In a bowl, combine the sliced strawberries, 1/2 cup sugar, and lemon juice. Let the mixture sit for 30 minutes.
- Make the Ice Cream Base: In another bowl, whisk together the heavy cream, whole milk, 3/4 cup sugar, vanilla extract, and a pinch of salt until dissolved.
- Combine the Mixtures: Add the strawberry mixture to the ice cream base and mix well.
- Chill and Freeze: Cover and refrigerate for at least 120 minutes.
- Churn the Ice Cream: Pour the mixture into an ice cream maker and churn for 25-30 minutes.
- Freeze Again: Transfer to a container and freeze for at least 240 minutes.
- Serve and Enjoy: Scoop into bowls or cones and enjoy!
Notes
Use ripe strawberries for the best flavor. Can be made dairy-free using coconut cream and almond milk.
