- 1 cup sour cream

- 1 teaspoon red food coloring

- Red velvet cake crumbs (for garnish)
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter, then press firmly into the bottom of the prepared pan. Bake for 10 minutes and let cool.
- Beat cream cheese until smooth, then add sugar, sour cream, and vanilla extract, mixing well.
- Add eggs one at a time, mixing just until combined. Stir in strawberry puree and red food coloring.
- Pour the cheesecake mixture over the crust and spread evenly.
- Bake for 60–70 minutes until set, then let cool in the oven with the door cracked for about 1 hour.
- Chill in the refrigerator for at least 4 hours.
- Top with whipped cream, fresh strawberries, and sprinkle red velvet cake crumbs before serving.
