Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter, then press firmly into the bottom of the prepared pan. Bake for 10 minutes and let cool.
  3. Beat cream cheese until smooth, then add sugar, sour cream, and vanilla extract, mixing well.
  4. Add eggs one at a time, mixing just until combined. Stir in strawberry puree and red food coloring.
  5. Pour the cheesecake mixture over the crust and spread evenly.
  6. Bake for 60–70 minutes until set, then let cool in the oven with the door cracked for about 1 hour.
