Ingredients

  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cut into small chunks
  • 1/2 teaspoon lemon juice
  • 67 tablespoons ice cold water
  • 5 cups sliced fresh strawberries
  • 4 tablespoons cornstarch
  • 3/4 cup granulated sugar
  • 1 pinch salt
  • A splash of lemon juice
  • 1 egg
  • 1 tablespoon water
  • 12 tablespoons coarse sugar (for sprinkling on top)

Instructions

  1. Prepare the Crust: In a large bowl, combine the flour, sugar, and salt. Cut in the cold butter until it resembles coarse crumbs. Add lemon juice and ice cold water, mixing gently until the dough comes together. Chill for at least 45 minutes.
  2. Make the Strawberry Filling: Toss sliced strawberries with cornstarch, sugar, a pinch of salt, and a splash of lemon juice. Let it rest for 15-20 minutes to thicken.
  3. Assemble the Pie: Roll out one disc of dough to fit a 9-inch pie dish. Turn it upside down, and add the filling. Roll out the second disc, place it over the filling, and seal the edges. Brush with egg wash and sprinkle coarse sugar on top.
  4. Bake: Preheat the oven to 375°F (190°C). Bake the pie for 45-50 minutes or until golden brown and bubbling. Cool before serving.

Notes

Serve chilled or at room temperature. Enjoy with vanilla ice cream or whipped cream.
