- 200 g digestive biscuits
- 80 g melted butter
- 400 g fresh strawberries
- 100 g sugar
- 400 ml cold heavy cream
- 250 g cream cheese (such as Philadelphia)
- 8 g gelatin sheets
- 1 tsp vanilla extract
Instructions
- Crush the biscuits and mix them with the melted butter. Press this mixture into the bottom of a springform pan and refrigerate.
- Blend the strawberries with sugar until smooth to create a strawberry coulis.
- Soak the gelatin sheets in cold water, then dissolve them in the slightly warmed strawberry coulis.
- Whip the heavy cream until it forms stiff peaks.
- In another bowl, whip the cream cheese with the vanilla extract. Then, fold in the cooled strawberry coulis.
- Gently fold the whipped cream into the strawberry and cream cheese mixture.
- Pour the mousse over the biscuit base and smooth the top.
- Refrigerate for at least 6 hours, but overnight is best for a firmer texture.
- Before serving, decorate with whipped cream rosettes and fresh strawberries.
Notes
For best results, use fresh strawberries. Store any leftovers in the refrigerator covered to maintain freshness.
