Description

A delightful dessert combining creamy cheesecake with light mousse, topped with fresh strawberries, perfect for any occasion.


Ingredients

  • 200 g digestive biscuits
  • 80 g melted butter
  • 400 g fresh strawberries
  • 100 g sugar
  • 400 ml cold heavy cream
  • 250 g cream cheese
  • 8 g gelatin sheets
  • 1 tsp vanilla extract

Instructions

  1. Crumble the biscuits and mix with melted butter. Press the mixture into the bottom of a springform pan and refrigerate.
  2. Blend the strawberries with sugar until smooth to make a coulis.
  3. Soak the gelatin sheets in cold water, then dissolve them in the slightly heated coulis.
  4. Whip the heavy cream into soft peaks.
  5. In a bowl, whisk the cream cheese with vanilla extract, then fold in the cooled strawberry coulis.
  6. Gently fold the whipped cream into the mixture.
  7. Pour the mousse over the biscuit base and smooth the top.
  8. Refrigerate for at least 6 hours, ideally overnight.
  9. Decorate with dollops of whipped cream and fresh strawberries before serving.

Notes

Best enjoyed within the first couple of days for optimal flavor. Store in the refrigerator for up to 3 days.
