- 1 1/2 cups (240 g) Golden Oreo cookie crumbs (about 24 cookies)
- 1/4 cup (59 g) unsalted butter, melted
- 4 teaspoons unflavored gelatin powder
- 3 tablespoons cold water
- 1 3/4 cups (420 ml) heavy whipping cream
- 4 ounces (113 g) Mascarpone cheese (or cream cheese)
- 1 cup (120 g) confectioners’ sugar, sifted
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
- 3 cups (425 g) fresh chopped strawberries
- 1 tablespoon fresh lemon juice
- 1 1/2 cups (230 g) fresh chopped strawberries (for topping)
- 1/4 cup (50 g) granulated sugar
- 2 teaspoons unflavored gelatin powder (for topping)
- 2 tablespoons cold water (for topping)
Instructions
- Make the Base: Line the bottom of a 9-inch springform pan with aluminum foil or parchment paper. Grind the Golden Oreos into fine crumbs using a food processor. Stir in the melted butter and press this mixture into the bottom of the pan. Freeze while preparing the filling.
- Make the Mousse: Sprinkle gelatin over cold water in a microwave-safe bowl and let sit. In a mixing bowl, whip together heavy cream, Mascarpone cheese, confectioners’ sugar, vanilla extract, and salt until fluffy. Puree fresh strawberries with lemon juice, strain it, heat some puree with dissolved gelatin, then mix it into whipped cream. Pour the mousse over the crust and refrigerate for 2 hours.
- Make the Jam: For the topping, sprinkle gelatin over water and set aside. Puree fresh strawberries with granulated sugar, strain it. Dissolve gelatin in a bit of the puree and mix back into the remaining puree. Spread on top of the mousse and refrigerate for at least 6 hours.
- Serve: Pipe whipped cream on top if desired, release the cake from the pan, transfer to a platter, and enjoy.
Notes
Store leftovers in an airtight container in the refrigerator for 3-5 days. It can be frozen for about a month if well-wrapped.
