Description

A delightful dessert combining soft cake with creamy strawberry mousse and a sweet glaze, perfect for any special occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 2 cups fresh strawberries (pureed)
  • 1/2 cup sugar
  • 2 tsp gelatin (dissolved in 2 tbsp water)
  • 1 1/2 cups heavy cream (whipped to soft peaks)
  • 1/2 cup strawberry jelly or jam
  • 1 tsp gelatin (optional for stability)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a round cake pan by lining it with parchment paper. In a bowl, cream the softened butter and sugar together. Add the eggs and vanilla, mixing well.
  2. Gradually add the dry ingredients and milk alternately until well combined. Pour the batter into the pan and bake for 25-30 minutes. Once baked, let it cool completely.
  3. In a saucepan, heat the strawberry puree with sugar until it dissolves. Remove from heat, stir in the dissolved gelatin, and let it cool to room temperature. Gently fold the whipped cream into the strawberry mixture until well combined.
  4. Place the cooled cake in a springform pan. Spread the strawberry mousse evenly over the top. Cover and refrigerate for 4-6 hours until the mousse is set.
  5. In a small pan, heat the strawberry jelly with a little water. If you want, add the optional gelatin for extra stability. After cooling slightly, pour the glaze over the mousse layer. Chill for an additional hour.
  6. Carefully remove the cake from the pan. Slice it into pieces and enjoy the wonderful layers of flavors.

Notes

Use ripe, fresh strawberries for best flavor. Be gentle when folding whipped cream to keep it light and airy. Optional gelatin can be added for a firmer mousse.
