Strawberry Mousse Cake

Description

A delightful and refreshing dessert with a light and airy texture, made with fresh strawberries and a rich mousse.


Ingredients

  • 1 1/2 cups Golden Oreo cookie crumbs (about 24 cookies)
  • 1/4 cup unsalted butter, melted
  • 4 teaspoons unflavored gelatin powder
  • 3 tablespoons cold water
  • 1 3/4 cups heavy whipping cream
  • 4 ounces Mascarpone cheese (or cream cheese)
  • 1 cup confectioners’ sugar, sifted
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 3 cups fresh chopped strawberries
  • 1 tablespoon fresh lemon juice
  • 1 1/2 cups fresh chopped strawberries (for topping)
  • 1/4 cup granulated sugar
  • 2 teaspoons unflavored gelatin powder (for topping)
  • 2 tablespoons cold water (for topping)

Instructions

  1. Line the inside bottom of a 9-inch springform pan with aluminum foil or parchment paper.
  2. In a food processor, grind the Golden Oreos until they become fine crumbs. Stir in the melted butter and press into the bottom of the prepared pan. Freeze.
  3. Sprinkle gelatin over cold water and let it sit for a few minutes. In a separate bowl, whip the heavy cream, Mascarpone, confectioners’ sugar, vanilla extract, and salt until fluffy. Puree chopped strawberries with lemon juice, strain, and mix with the dissolved gelatin. Fold this strawberry mixture into the whipped cream.
  4. Pour the mousse over the crust and refrigerate for 2 hours.
  5. For the topping, sprinkle gelatin over cold water. Puree fresh strawberries with sugar, strain, and mix with the dissolved gelatin. Spread this mixture over the mousse and refrigerate for at least 6 hours.
  6. Pipe whipped cream on top if desired, remove the cake from the pan, and transfer it to a serving platter.

Notes

Store any leftovers in the refrigerator and cover tightly. It should stay good for about 3-4 days.
