Delicious cupcakes that combine the flavors of strawberries, mangoes, and a hint of tequila for a festive treat.

- 3 1⁄2 cups all-purpose flour
- 1 1⁄4 cups caster sugar
- 3 teaspoons baking powder
- 1⁄2 teaspoon fine salt
- 1⁄2 cup unsalted butter, softened
- 2 large eggs
- 1 1⁄2 cups full-cream milk
- 1⁄2 cup vegetable oil
- 2 tablespoons Greek yogurt or sour cream
- 1 teaspoon vanilla extract or vanilla bean paste
- 4 drops pink food gel
- 3 drops red food gel
- 1 teaspoon strawberry flavoring
- 4 drops yellow food gel
- 1 teaspoon mango flavoring
- 2 teaspoons tequila (optional)
- 1 batch American buttercream frosting or Swiss meringue buttercream frosting
- 5 drops pink food gel
- 3 drops red food gel
- 1 teaspoon strawberry flavoring
- 5 drops yellow food gel
- 1 teaspoon mango flavoring
- 1 cup granulated sugar
- 10 limes, cut into wedges
- 10 strawberries, washed and halved
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, cream the softened butter until light and fluffy.
- Beat in the eggs one at a time. Add the milk, vegetable oil, Greek yogurt, and vanilla extract, mixing until well combined.
- Divide the batter into two bowls. To one bowl, add the pink and red food gel along with the strawberry flavoring. To the other bowl, add the yellow food gel and mango flavoring.
- Alternate spooning the strawberry and mango batters into the cupcake liners.
- Bake for 20-25 minutes or until a toothpick comes out clean. Cool on a wire rack.
- For the frosting, prepare the buttercream of your choice. Divide the frosting into two bowls and add the respective food gels and flavorings.
- Pipe the frosting onto the cooled cupcakes using a piping bag.
- Decorate with a lime wedge and a strawberry half on each cupcake, optionally dipping the lime in sugar.
- Store in an airtight container and enjoy!
Notes
Make sure all ingredients are at room temperature for a smoother batter. Freeze the cupcakes tightly wrapped to keep them fresh longer.
