Ingredients

  • 1 box of white cake mix
  • 1 (3 oz) box of strawberry gelatin
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/2 cup lemon juice (fresh is best!)
  • 1 cup diced strawberries (fresh or frozen)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large mixing bowl, combine the cake mix and strawberry gelatin. Add the eggs, vegetable oil, water, and lemon juice. Mix until smooth. Gently fold in the diced strawberries.
  3. Pour the batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  4. For the frosting, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar, then mix in the lemon juice, lemon zest, and vanilla extract until fluffy.
  5. Once the cakes are cooled, place one layer on a serving plate. Spread a layer of frosting on top, add the second layer, and frost the top and sides.
  6. Garnish with fresh strawberries or lemon zest. Slice and enjoy!
