- 1 box of white cake mix
- 1 (3 oz) box of strawberry gelatin
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1/2 cup lemon juice (fresh is best!)
- 1 cup diced strawberries (fresh or frozen)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large mixing bowl, combine the cake mix and strawberry gelatin. Add the eggs, vegetable oil, water, and lemon juice. Mix until smooth. Gently fold in the diced strawberries.
- Pour the batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar, then mix in the lemon juice, lemon zest, and vanilla extract until fluffy.
- Once the cakes are cooled, place one layer on a serving plate. Spread a layer of frosting on top, add the second layer, and frost the top and sides.
- Garnish with fresh strawberries or lemon zest. Slice and enjoy!
