- 2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup diced strawberries
- 1/2 cup diced kiwi
- Sliced strawberries for garnish
- Sliced kiwi for garnish
- Kiwi and strawberry sauce (homemade or store-bought)
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs with melted butter. Press into the bottom of the pan to form the crust. Bake for 10 minutes and set aside to cool.
- In a mixing bowl, beat the cream cheese until smooth. Add sugar, sour cream, and vanilla, and beat until combined. Add eggs one at a time, mixing well after each addition. Fold in diced strawberries and kiwi.
- Pour the cheesecake batter over the cooled crust and level with a spatula.
- Bake for 60-70 minutes, or until the center is set. Cool in the oven for 1 hour with the door cracked.
- Refrigerate for at least 4 hours or overnight to set.
- Before serving, top with fresh slices of strawberries and kiwi, and drizzle with sauce.
Notes
For best results, serve chilled. Leftovers can be stored in an airtight container for 4-5 days or frozen for up to 3 months. Thaw in the refrigerator before serving.
