Description

A sweet and refreshing dessert featuring creamy cheesecake with tangy strawberries and kiwis.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup diced strawberries
  • 1/2 cup diced kiwi
  • Sliced strawberries for garnish
  • Sliced kiwi for garnish
  • Kiwi and strawberry sauce (homemade or store-bought)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the graham cracker crumbs with melted butter. Press into the bottom of the pan to form the crust. Bake for 10 minutes and set aside to cool.
  3. In a mixing bowl, beat the cream cheese until smooth. Add sugar, sour cream, and vanilla, and beat until combined. Add eggs one at a time, mixing well after each addition. Fold in diced strawberries and kiwi.
  4. Pour the cheesecake batter over the cooled crust and level with a spatula.
  5. Bake for 60-70 minutes, or until the center is set. Cool in the oven for 1 hour with the door cracked.
  6. Refrigerate for at least 4 hours or overnight to set.
  7. Before serving, top with fresh slices of strawberries and kiwi, and drizzle with sauce.

Notes

For best results, serve chilled. Leftovers can be stored in an airtight container for 4-5 days or frozen for up to 3 months. Thaw in the refrigerator before serving.
