- 2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup diced strawberries
- 1/2 cup diced kiwi
- Sliced strawberries (for topping)
- Sliced kiwi (for topping)
- Kiwi and strawberry sauce (homemade or store-bought)
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs with the melted butter until well combined. Press firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then set aside to cool.
- In a large mixing bowl, beat the cream cheese until smooth. Add sugar, sour cream, and vanilla extract, beating until fully combined. Add eggs one at a time, mixing well after each addition. Gently fold in diced strawberries and kiwi.
- Pour the cheesecake batter over the cooled crust and spread evenly.
- Bake for 60-70 minutes, or until the center is set and slightly jiggly. Cool inside the oven with the door cracked open for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh slices of strawberries and kiwi, and drizzle with kiwi and strawberry sauce.

Ensure cream cheese is at room temperature for a smooth batter. Using fresh fruit enhances flavor and texture.
