- 2 packages (3 oz each) strawberry Jell-O
- Boiling water & cold water (as per package instructions)
- 1 pint (about 2 cups) fresh strawberries, hulled and sliced
- 2 1/2 cups cold Sprite (divided)
- 1 package (3 oz) strawberry Jell-O
- 4 oz full-fat cream cheese, softened
- 1 container (8 oz) Cool Whip, thawed
- Extra Cool Whip or fresh whipped cream (optional)
- Fresh mint leaves (optional)
- Fresh strawberries for garnish (optional)
Instructions
- Set up 9 clear plastic cups at an angle in a muffin tin using small balls of foil or paper to prop them up.
- Prepare the two packets of strawberry Jell-O according to the package instructions and pour into the angled cups. Add sliced strawberries and refrigerate until set completely.
- Heat 1 1/2 cups of Sprite until boiling, whisk in strawberry Jell-O until dissolved. Blend with cream cheese until smooth, then add remaining Sprite and blend again. Fold in Cool Whip until smooth, reserving 1/2 cup for garnish if desired.
- Pour the mousse mixture over the set Jell-O layer, using slightly less mousse than Jell-O. Refrigerate to set completely.
- Once set, top with whipped cream or Cool Whip, and garnish with a fresh strawberry and mint. Enjoy!

Use fresh strawberries for the best flavor and sweetness. Ensure Jell-O is completely set before adding the mousse layer.
