Description

A delightful no-bake dessert combining creamy strawberry and vanilla ice creams with a crunchy chocolate crust, topped with rich chocolate ganache.


Ingredients

  • 2 cups chocolate wafer cookies, crushed (about 14 cookies)
  • 1/4 cup unsalted butter, melted
  • 1 quart strawberry ice cream, softened
  • 1 quart vanilla ice cream, softened
  • 1 cup fresh strawberries, sliced
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy whipping cream
  • Extra fresh strawberries (optional garnish)
  • Chocolate curls (optional garnish)

Instructions

  1. In a medium bowl, combine crushed chocolate wafer cookies and melted butter. Mix until evenly coated and press into a 9-inch springform pan. Freeze for 10-15 minutes.
  2. Spread softened strawberry ice cream over the crust and smooth it out. Freeze for 30 minutes.
  3. Spread softened vanilla ice cream over the strawberry layer. Arrange sliced strawberries on top and freeze for at least 1 hour.
  4. Heat heavy whipping cream in a saucepan. Pour over semisweet chocolate chips and let sit for 2-3 minutes. Stir until smooth to make ganache.
  5. Pour ganache over the ice cream cake and return to the freezer for 15-20 minutes to set.
  6. Garnish with extra strawberries and chocolate curls before serving. Slice and enjoy!

Notes

Best enjoyed right after serving when it’s perfectly creamy and cool. Store leftovers tightly wrapped in the freezer for up to a week.
