Description

Light and airy French crullers topped with a sweet strawberry glaze, perfect for breakfast or as a snack.


Ingredients

  • 1/2 cup water
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 1/3 cups bread flour
  • 4 large eggs
  • Vegetable or canola oil (for frying)
  • 2 cups powdered sugar (sifted)
  • 1/4 cup fresh strawberries (mashed or puréed)
  • 34 tablespoons whole milk
  • 1/2 cup freeze-dried strawberries (processed into fine bits)
  • 1/4 cup granulated sugar

Instructions

  1. Cut parchment paper into 18 squares (4×4 inches). Optionally, trace a 3-3 1/2 inch circle onto each square for guidance. Set aside.
  2. In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a gentle boil over medium-high heat.
  3. Remove from heat and add the flour, stirring vigorously until smooth.
  4. Return to heat and stir until the mixture thickens and pulls away from the pan.
  5. Transfer the mixture to a stand mixer with a paddle attachment. Beat on medium speed for 4-5 minutes.
  6. Add eggs one at a time, mixing thoroughly after each addition until the batter is smooth and elastic.
  7. Transfer the dough to a piping bag with a large star tip. Spray a baking sheet and arrange parchment squares.
  8. Pipe a ring of dough onto each square, ensuring circles are closed. Set aside.
  9. Heat oil in a deep fryer or skillet to 370°F. Fry crullers for 2-3 minutes on each side until golden brown.
  10. In a bowl, whisk powdered sugar, strawberries, and milk until smooth. Dip each cruller in the strawberry glaze.

Notes

Ensure oil is at the right temperature for frying. Store leftover crullers in an airtight container at room temperature for up to two days.
