- 2 1/2 tsp baking powder

- 1 cup unsalted butter (room temperature)
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract

- 1/2 cup strawberry puree (fresh or frozen, blended)
- 1 cup fresh strawberries (mashed or pureed)
- 1 cup powdered sugar
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch cake pan (or two 8-inch pans for layering).
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Alternate adding the dry ingredients and milk to the mixture, mixing until just combined. Then, fold in the strawberry puree.
- Pour the batter into the prepared cake pan(s) and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before adding the glaze.
- In a small bowl, whisk together the strawberry puree, powdered sugar, lemon juice, and vanilla until smooth.
- If the glaze is too thick, add a teaspoon of water or milk. If it is too thin, add more powdered sugar.
- Drizzle or spread the strawberry glaze over the cooled cake.
- Let the glaze set for 15-20 minutes before slicing.
Notes
Use fresh strawberries for the best flavor. Ensure butter is at room temperature for easier mixing. Allow the cake to cool completely before glazing.
