- 1 1/2 cups sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup fresh strawberries, pureed
- 1/2 cup milk
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons milk (for glaze)
- Fresh strawberries for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the strawberry puree and vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this mixture to the creamed mixture alternately with the milk, mixing until well combined.
- Pour the batter into the prepared bundt pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for 10 minutes before removing it from the pan.
- For the glaze, mix powdered sugar and milk until smooth and drizzle it over the cooled cake.
- Top with fresh strawberries.
Notes
Use ripe strawberries for best flavor. If the glaze is too thick, adjust with more milk. Can add chocolate chips or lemon zest for variation.
