- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3 tbsp strawberry jello powder
- 1/4 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1 cup white sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup freeze-dried strawberries
- 1 cup unsalted butter, softened (for frosting)
- 1 tsp vanilla extract (for frosting)
- 3–4 cups powdered sugar (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-count muffin pan with cupcake liners and set aside.
- Pulse fresh strawberries in a food processor until puréed and set aside.
- In a medium bowl, whisk together the flour, baking powder, salt, and strawberry jello powder. Set aside.
- In a large bowl, beat softened butter, vegetable oil, and sugar together until light and fluffy. Add the eggs, vanilla extract, and the puréed strawberries. Mix until fully combined.
- Gradually add the dry flour mixture to the wet ingredients, alternating with the milk, and mix until well combined.
- Spoon the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, blend freeze-dried strawberries into a fine powder.
- In a large mixing bowl, beat softened butter and vanilla extract until smooth and creamy. Gradually add powdered sugar, mixing in the strawberry powder until desired flavor is achieved.
- Transfer the strawberry buttercream to a piping bag and frost the cooled cupcakes. Optionally garnish with a fresh strawberry slice on top.
Notes
For a more intense strawberry flavor, add extra puréed strawberries to the batter or frosting.
