Delightful no-bake dessert cups filled with creamy vanilla cheesecake and topped with a crunchy strawberry mixture.

- 24 vanilla sandwich cookies, made into crumbs
- 1 oz freeze-dried strawberries, ground into a fine powder
- 1/4 cup unsalted butter, melted
- 8 ounces cream cheese, room temperature
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 1 1/2 cups heavy cream
- Fresh strawberry slices
- Additional strawberry crunch crumbs
Instructions
- In a bowl, combine the vanilla sandwich cookie crumbs, freeze-dried strawberry powder, and melted butter. Mix until well combined. Divide the crumb mixture into 28 2-ounce plastic cups and press firmly into the bottom.
- In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Pour in the heavy cream and whip on medium-high speed until light and fluffy. Transfer to a piping bag and fill the cups about 3/4 full.
- Sprinkle additional strawberry crunch crumbs on top and garnish each cup with a fresh strawberry slice. Chill in the refrigerator for 2 to 3 days before serving.
Notes
For a sweeter taste, adjust the sugar in the cream cheese mixture to your liking. Use a piping bag for easier filling of the cups.
