Description

A delightful dessert that combines the rich, creamy texture of cheesecake with the refreshing taste of strawberries, topped with a crunchy layer.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups whipped cream
  • 1 cup fresh strawberries, chopped
  • 1 cup crushed vanilla sandwich cookies
  • 1/4 cup freeze-dried strawberries, crushed

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes and allow to cool completely.
  2. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in whipped cream and chopped strawberries. Pour the mixture over the cooled crust and smooth the top.
  3. In a small bowl, mix crushed vanilla sandwich cookies, crushed freeze-dried strawberries, and melted butter. Sprinkle over the cheesecake.
  4. Refrigerate for at least 4 hours or overnight to set. Once set, remove from the springform pan, slice, and enjoy!

Notes

Garnish slices with additional fresh strawberries or whipped cream. Can be stored in the refrigerator for 5-7 days or frozen for up to 3 months.
