Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 cup fresh strawberries, diced
  • 1 tablespoon granulated sugar
  • 6 small flour tortillas
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup cinnamon sugar
  • 1/2 cup crushed graham crackers
  • 1/4 cup sliced almonds, toasted

Instructions

  1. In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Gently fold in the whipped cream. Set aside.
  2. In a separate bowl, mix diced strawberries with granulated sugar until coated. Set aside.
  3. Preheat the oven to 350°F (175°C). Brush both sides of the flour tortillas with melted butter and sprinkle with cinnamon sugar. Drape each tortilla over the oven rack to create a taco shape and bake for 8-10 minutes until golden brown and crispy. Let cool slightly.
  4. Fill each taco shell with the cheesecake filling and top with sugared strawberries. Sprinkle with crushed graham crackers and toasted sliced almonds.
  5. Serve immediately for the best taste.

Notes
