- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1 cup fresh strawberries, diced
- 1 tablespoon granulated sugar
- 6 small flour tortillas
- 2 tablespoons unsalted butter, melted
- 1/4 cup cinnamon sugar
- 1/2 cup crushed graham crackers
- 1/4 cup sliced almonds, toasted
Instructions
- In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Gently fold in the whipped cream. Set aside.
- In a separate bowl, mix diced strawberries with granulated sugar until coated. Set aside.
- Preheat the oven to 350°F (175°C). Brush both sides of the flour tortillas with melted butter and sprinkle with cinnamon sugar. Drape each tortilla over the oven rack to create a taco shape and bake for 8-10 minutes until golden brown and crispy. Let cool slightly.
- Fill each taco shell with the cheesecake filling and top with sugared strawberries. Sprinkle with crushed graham crackers and toasted sliced almonds.
- Serve immediately for the best taste.
Notes
For variety, try using different fruits like blueberries or peaches, or flavored cream cheese.
