- 24 Golden Oreo cookies
- 4 tbsp salted butter, melted
- 24 oz cream cheese, softened
- 2 cups powdered sugar
- 2 tsp lemon juice
- 1 cup fresh strawberries, puréed
- 2 tsp vanilla extract
- 1 1/2 cups heavy whipping cream
- Strawberry shortcake crumble (store-bought or homemade)
Instructions
- Prepare the Crust: Crush the Golden Oreos finely and mix them with melted butter. Press into the bottom of a 9-inch springform pan and freeze.
- Make the Cheesecake Filling: Beat cream cheese, vanilla, lemon juice, and powdered sugar until smooth. Whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Create Two Layers: Divide the cheesecake filling in half. Mix one half with puréed strawberries.
- Assemble the Cheesecake: Pour the strawberry mixture into the crust, then spread the plain cheesecake filling on top. Freeze for 4-5 hours until set.
- Add Topping: Remove from the springform pan, coat the top with strawberry shortcake crumble, and freeze until ready to serve.
Notes
For best results, ensure cream cheese is softened and use fresh strawberries for the purée.
