Description

Delicious bite-sized desserts combining creamy cheesecake and tangy strawberries with a crunchy topping.


Ingredients

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/2 cup strawberry puree or strawberry jam
  • 1 1/2 cups crushed graham crackers or golden Oreos
  • 1/4 cup unsalted butter, melted
  • 1 cup crushed golden Oreos or vanilla wafer cookies
  • 1/2 cup freeze-dried strawberries, crushed
  • 3 tbsp melted butter
  • 1 1/2 cups white chocolate or candy melts, melted (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and line a mini muffin tin or 8×8-inch pan with parchment paper.
  2. In a medium bowl, mix the crushed graham crackers or Oreos with melted butter until well combined. Press this mixture firmly into the bottom of the muffin cups or pan to form a crust layer. Set aside.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Mix in eggs one at a time, followed by sour cream, vanilla extract, and strawberry puree until fully combined. Pour the cheesecake mixture over the prepared crust, filling each cup about 3/4 full.
  4. Bake for 20-25 minutes for mini bites or 35-40 minutes for a larger pan until the center is set but slightly jiggly. Allow to cool, then refrigerate for at least 4 hours or overnight.
  5. In a small bowl, combine the crushed Oreos, freeze-dried strawberries, and melted butter until the mixture resembles coarse crumbs.
  6. After the cheesecake is fully chilled, remove the bites from the tin or cut them into squares. Roll or sprinkle the strawberry crunch topping over each piece, pressing lightly to adhere.
  7. (Optional) Dip each cheesecake bite into melted white chocolate for extra indulgence and place on a parchment-lined baking sheet. Refrigerate for 15-20 minutes until the chocolate sets.
  8. Serve and enjoy!

Notes

For best flavor, use fresh ingredients and make sure the cream cheese is very soft.
