- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 cup sliced fresh strawberries
- 2 tablespoons granulated sugar (for filling)
- 1 tablespoon cornstarch
- 1/2 cup all-purpose flour (for crumble topping)
- 1/4 cup packed brown sugar
- 1/4 cup rolled oats
- 1/4 teaspoon cinnamon
- 1/4 cup unsalted butter (for crumble topping, cold and cubed)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Mix until just combined.
- In a small bowl, gently toss the sliced strawberries with the sugar and cornstarch.
- In a medium bowl, combine the flour, brown sugar, rolled oats, and cinnamon for the crumble topping. Cut in the cold butter until the mixture resembles coarse crumbs.
- Spread half of the cake batter into the prepared pan. Spoon the strawberry filling over it, then spread the remaining cake batter on top. Sprinkle the crumble topping evenly over the cake.
- Bake for 45 to 55 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10-15 minutes before releasing the ring. Allow to cool completely before slicing and serving.
Notes
Serve warm or at room temperature. Pairs well with coffee or tea, and can be topped with whipped cream or ice cream.
