Delightful Strawberry Crumble Bars topped with tangy lemon icing, perfect for dessert tables and picnics.

- 2 cups fresh strawberries (hulled and halved or quartered)
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 1 tablespoon cornstarch
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 7 tablespoons cold unsalted butter (cubed)
- 1/2 cup brown sugar (light or dark)
- 1 large egg (room temperature)
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/2 cup powdered sugar (sifted)
- 1 cup fresh strawberries (halved)
Instructions
- Preheat the oven to 350°F (175°C). Toss hulled strawberries with 3 tablespoons sugar and lemon juice on a baking sheet lined with parchment. Roast for 17 minutes, stirring halfway. Transfer to a bowl, stir in vanilla, lemon zest, and cornstarch. Lightly mash and set aside to cool.
- Line an 8-inch round pan with parchment. In a large bowl, whisk brown sugar, egg, and vanilla. In another bowl, whisk flour, baking powder, and salt. Cut cold butter into the flour mixture until pea-sized crumbs form. Combine mixtures until just combined.
- Press 2/3 of the crumble mixture into the pan. Spread the strawberry filling evenly over the base and scatter the remaining crumble mixture over the top. Add sliced strawberries for decoration.
- Bake at 350°F for 25-35 minutes until crust is golden. Cool completely on a wire rack.
- Mix lemon juice and sifted powdered sugar to create icing. Drizzle over bars once cool.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Great served with vanilla ice cream.
