Ingredients

  • 2 cups fresh strawberries (hulled and halved or quartered)
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 tablespoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 7 tablespoons cold unsalted butter (cubed)
  • 1/2 cup brown sugar (light or dark)
  • 1 large egg (room temperature)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 cup powdered sugar (sifted)
  • 1 cup fresh strawberries (halved, for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Toss hulled strawberries with 3 tablespoons of sugar and lemon juice on a lined baking sheet and roast for 17 minutes, stirring halfway. Transfer to a bowl, stir in vanilla, lemon zest, and cornstarch, and lightly mash. Set aside to cool.
  2. Line the bottom of an 8-inch round pan with parchment paper. Whisk together brown sugar, egg, and vanilla extract in one bowl, and in another bowl, combine flour, baking powder, and salt. Cut cold butter into the flour mixture until pea-sized crumbs form, then mix with the sugar and egg mixture until just combined.
  3. Press 2/3 of the crumble mixture into the prepared pan, spread the strawberry filling over it, and scatter the remaining crumble on top. Add sliced strawberries for decoration.
  4. Bake for 25-35 minutes until the crust is lightly golden. Cool completely on a wire rack.
  5. For the icing, stir together lemon juice and sifted powdered sugar, then drizzle over the cooled bars.

Notes

Use fresh strawberries for the best flavor. Adjust sugar based on the sweetness of strawberries used. Can be served with whipped cream or ice cream.
