Description

Delightful treat combining sweet strawberries with a crispy crumble and zesty lemon icing, perfect for dessert or a sweet snack.


Ingredients

  • 2 cups fresh strawberries (hulled and halved or quartered)
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 tablespoon cornstarch
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 7 tablespoons cold unsalted butter (cubed)
  • ½ cup brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract (for egg mixture)
  • 1 tablespoon lemon juice (for icing)
  • ½ cup powdered sugar (sifted)
  • 1 cup fresh strawberries (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Toss the hulled strawberries with 3 tablespoons of sugar and lemon juice on a baking sheet lined with parchment paper, then roast for 17 minutes, stirring halfway.
  2. In a bowl, stir in vanilla extract, lemon zest, and cornstarch to the roasted strawberries and set aside to cool.
  3. Alternatively, mix fresh strawberries with sugar, lemon zest, vanilla, and cornstarch without roasting.
  4. Line an 8-inch round pan with parchment paper.
  5. In a bowl, whisk together brown sugar, egg, and vanilla extract.
  6. In another bowl, combine flour, baking powder, and salt. Cut in cold butter until crumbly, then combine with the egg mixture until just mixed.
  7. Press 2/3 of the crumble mixture into the pan, spread the strawberry filling, then scatter the remaining crumble on top.
  8. Bake for 25-35 minutes until golden. Let cool on a wire rack.
  9. For lemon icing, mix lemon juice with sifted powdered sugar and drizzle over the cooled bars or slices as desired.

Notes

Serve at room temperature or chilled. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Add lemon icing just before serving.
