A delightful twist on the classic banana bread with creamy cream cheese and fresh strawberries.

- 1 egg
- 1 cup brown sugar
- 1/4 cup vegetable oil
- 1 tablespoon vanilla extract
- 1/4 cup sour cream
- 2 large ripe bananas, mashed
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
- 1 1/3 cups all-purpose flour
- 4 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg
- 3 tablespoons all-purpose flour
- 1 cup fresh strawberries, chopped and tossed in 1 tablespoon of flour
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with cooking spray or grease and flour.
- In a large bowl, whisk together the egg, brown sugar, vegetable oil, sour cream, and vanilla extract. Mix in the mashed bananas, then gently stir in the flour, baking powder, baking soda, and salt until just combined.
- In a separate bowl, beat the cream cheese and granulated sugar until smooth. Mix in 1 egg and 3 tablespoons of flour, then fold in the floured strawberries.
- Spread half of the banana bread batter into the prepared loaf pan, then carefully spread the cream cheese filling on top. Top with the remaining batter and smooth lightly.
- Bake for 45-50 minutes until set. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
Notes
Serve warm or at room temperature. Pairs well with coffee or tea.
