- 1 1/2 cups crushed graham crackers
- 5 tablespoons melted butter
- 2 (8 oz) packages cream cheese, softened
- 3/4 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 cup mascarpone cheese
- 1 cup whipped cream
- 1/4 cup sugar
- Strawberry sauce (for drizzle)
- Fresh strawberries (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix together the crushed graham crackers and melted butter to form the crust. Press the mixture into the bottom of a baking dish.
- In another bowl, beat cream cheese and sugar until smooth. Add in eggs one at a time, mixing after each addition, then fold in sour cream. Pour the mixture over the crust and bake for 25–30 minutes or until set. Allow to cool.
- In a separate bowl, combine mascarpone cheese, whipped cream, and sugar, folding gently until smooth. Spread this mixture over the cooled baked layer.
- Top with strawberry sauce and garnish with fresh strawberries. Refrigerate for at least 2 hours before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be made a day ahead of serving.
