These bite-sized delights combine the creamy richness of cheesecake with the fruity freshness of strawberries, all wrapped in a smooth layer of white chocolate.

- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup strawberry puree or strawberry jam
- 1 cup crushed graham crackers
- 1/4 cup unsalted butter, melted
- 2 cups white chocolate chips or white candy melts
- 1 tbsp vegetable oil or coconut oil
- Crushed freeze-dried strawberries (optional)
- Sprinkles (optional)
Instructions
- Preheat your oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
- For the crust, mix crushed graham crackers with melted butter. Press the mixture into the pan and bake for 8-10 minutes.
- For the cheesecake filling, beat cream cheese and sugar together until smooth. Add eggs one at a time, mixing well after each addition. Then mix in sour cream, vanilla, and strawberry puree. Pour this filling over the baked crust and bake for 35-40 minutes.
- Let the cheesecake cool, then refrigerate for at least 4 hours.
- Once chilled, cut the cheesecake into squares and freeze for 30 minutes.
- Melt white chocolate with oil. Dip each square in the chocolate, letting the excess drip off, and place them back on a baking sheet.
- While the chocolate is still soft, you can add crushed freeze-dried strawberries or sprinkles for decoration.
- Chill to set for 10-15 minutes, then serve and enjoy!

Store in an airtight container in the refrigerator for 5-7 days or freeze for up to 2 months.
