  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar
  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter, melted
  • 6 large crepes or thin cake layers (store-bought or homemade)
  • Powdered sugar, for dusting

Instructions

  1. In a bowl, beat the softened cream cheese, 1/4 cup granulated sugar, and vanilla extract until smooth and creamy.
  2. Whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. Mix the diced strawberries with 2 tablespoons of sugar and let them sit for 10 minutes to release their juices.
  4. Combine the crushed shortbread cookies (or graham crackers) with melted butter until it resembles wet sand.
  5. Lay out a crepe or thin cake layer. Spread a layer of the cheesecake filling evenly, sprinkle with the shortcake mixture, and add a line of macerated strawberries.
  6. Roll the crepe tightly to form a sushi roll shape. Wrap each roll in plastic wrap and refrigerate for at least 1 hour to set.
  7. Once chilled, slice the rolls into 1-inch pieces. Dust with powdered sugar before serving.
