- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, diced
- 2 tablespoons granulated sugar
- 1 1/2 cups crushed shortbread cookies or graham crackers
- 1/4 cup unsalted butter, melted
- 6 large crepes or thin cake layers (store-bought or homemade)
- Powdered sugar, for dusting
Instructions
- In a bowl, beat the softened cream cheese, 1/4 cup granulated sugar, and vanilla extract until smooth and creamy.
- Whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Mix the diced strawberries with 2 tablespoons of sugar and let them sit for 10 minutes to release their juices.
- Combine the crushed shortbread cookies (or graham crackers) with melted butter until it resembles wet sand.
- Lay out a crepe or thin cake layer. Spread a layer of the cheesecake filling evenly, sprinkle with the shortcake mixture, and add a line of macerated strawberries.
- Roll the crepe tightly to form a sushi roll shape. Wrap each roll in plastic wrap and refrigerate for at least 1 hour to set.
- Once chilled, slice the rolls into 1-inch pieces. Dust with powdered sugar before serving.

Best served chilled. Pair with whipped cream or vanilla ice cream for an extra touch.
