Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup heavy cream
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup strawberry jam

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter in a bowl, then press into the bottom of the prepared pan.
  3. Beat cream cheese and granulated sugar until smooth. Add sour cream and incorporate eggs one at a time, followed by vanilla extract and heavy cream. Pour into the crust.
  4. Bake for 55-60 minutes until set but wobbly.
  5. Cool with the oven off for 1 hour, then refrigerate for at least 4 hours.
  6. Spread strawberry jam over the cheesecake and top with sliced strawberries before serving.
