Description

A delicious dessert that combines creamy cheesecake with fresh strawberries, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs
  • 3 tbsp sugar (for crust)
  • 5 tbsp unsalted butter, melted
  • 1/8 tsp salt (for crust)
  • 2 lbs full-fat cream cheese, softened
  • 1 1/2 cups sugar (for filling)
  • 1/4 tsp salt (for filling)
  • 2 tsp vanilla extract
  • 1 tbsp fresh lemon juice (for filling)
  • 1 tbsp cornstarch
  • 4 eggs, room temperature
  • 1 cup sour cream, room temperature
  • 1 lb fresh strawberries, diced
  • 6 tbsp sugar (for topping)
  • 1 tbsp fresh lemon juice (for topping)
  • 1/2 tsp vanilla extract (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and position the rack in the lower third.
  2. Wrap a double layer of aluminum foil around the bottom and sides of a 9-inch springform pan.
  3. Mix together the graham cracker crumbs, sugar, melted butter, and salt. Press into the bottom of the springform pan and bake for 10-12 minutes, then cool.
  4. Lower the oven temperature to 325°F (163°C).
  5. Beat the softened cream cheese until smooth. Gradually add the sugar and beat until fluffy. Mix in salt, vanilla, lemon juice, and cornstarch.
  6. Beat in the eggs one at a time on low speed, then mix in the sour cream until smooth.
  7. Pour the batter into the cooled crust and place the springform pan into a roasting pan.
  8. Pour boiling water into the roasting pan, halfway up the sides of the springform pan. Bake for 1 hour 40-50 minutes.
  9. Leave the cheesecake in the oven for 1 hour after baking with the door slightly ajar.
  10. Cool at room temperature, then refrigerate for at least 5 hours or overnight.
  11. For the topping, cook half the strawberries with sugar and lemon juice until thickened, then stir in remaining strawberries.
  12. Spread the topping over the chilled cheesecake, slice, and enjoy!

Notes

Use fresh strawberries for the best flavor. Make sure cream cheese is softened for a smooth filling.
