  • 1/4 cup white sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 2 1/4 cups gluten-free all-purpose flour
  • 1/2 cup gluten-free graham cracker crumbs
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup diced strawberries

Instructions

  1. Make the Cheesecake Filling: In a small bowl, mix the softened cream cheese, icing sugar, and vanilla extract until smooth. Freeze dollops on a parchment-lined plate.
  2. Prepare the Cookie Dough: Beat the butter, white sugar, and brown sugar until fluffy. Add the egg, milk, and vanilla. Stir in the flour, graham cracker crumbs, baking soda, and salt. Fold in the strawberries.
  3. Assemble the Cookies: Scoop the dough, flatten it, insert a dollop of cheesecake filling, and wrap the dough around it. Chill for 2 hours.
  4. Bake: Preheat the oven to 350°F (175°C). Bake the dough balls for 18-22 minutes until golden brown.
  5. Cool and Enjoy: Transfer the cookies to a wire rack to cool. Store in an airtight container.

Notes

Use fresh strawberries for the best flavor. You can also freeze the cookies for up to a month.
