Description

A delicious blend of creamy cheesecake and sweet strawberries, this coffee cake is perfect for breakfast, brunch, or dessert.


Ingredients

  • 6 tablespoons sugar
  • 1 egg white
  • 2 cups fresh strawberries, sliced
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 5.5 tablespoons unsalted butter, softened
  • 2/3 cup sugar (1/3 cup light brown sugar + 1/3 cup granulated sugar)
  • 1 egg + 1 egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup sour cream
  • 1/2 cup sugar (for crumb topping)
  • 3/4 cup flour (for crumb topping)
  • 6 tablespoons butter, chilled and cubed (for crumb topping)
  • 3/4 cup powdered sugar (for glaze)
  • 2 tablespoons cream (or milk) (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Make the Crumb Topping: In a bowl, combine sugar, flour, and chilled cubed butter. Stir until crumbly and set aside in the fridge.
  2. Preheat and Prepare the Pan: Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  3. Prepare the Cheesecake Filling: Mix cream cheese and sugar until creamy, then add the egg white and mix until just combined.
  4. Make the Cake Batter: Stir together flour, baking powder, and salt. Cream softened butter in another bowl, then add both sugars and mix. Add the egg, egg yolk, and vanilla; mix well. Gradually mix in the flour mixture and sour cream until everything is well combined.
  5. Assemble the Cake: Spread 2/3 of the batter in the prepared pan. Spoon the cream cheese filling on top, arrange the sliced strawberries, drizzle the remaining batter over, scatter more strawberries, and sprinkle with the crumb topping.
  6. Bake the Cake: Bake for 60-70 minutes or until the center is set. Cool the cake and then remove it from the pan.
  7. Make the Glaze: Whisk together cream, powdered sugar, and vanilla until smooth. Drizzle this glaze over the cooled cake and serve.

Notes

Store any leftover cake in an airtight container in the refrigerator for about 3-4 days. It can also be frozen for longer storage.
