Description

Delightful buns featuring soft brioche dough filled with creamy cheesecake and sweet strawberry preserves.


Ingredients

  • For the Tangzhong:
  • 3 tbsp all-purpose flour
  • 1/3 cup + 2 tbsp whole milk
  • For the Brioche Dough:
  • 1/3 cup + 1 tbsp whole milk
  • 1 tbsp granulated sugar
  • 1 1/2 tsp active dry yeast
  • 1 egg, room temperature
  • 2 cups all-purpose flour
  • 1 1/4 tsp salt
  • 3 tbsp unsalted butter, room temperature
  • For the Streusel:
  • 2 tbsp unsalted butter, melted
  • 3 tbsp light brown sugar
  • 1/4 cup + 2 tbsp all-purpose flour
  • For the Cheesecake Filling:
  • 3/4 cup cottage cheese, room temperature
  • 1 tbsp egg, whisked
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 3/4 cup strawberry preserves

Instructions

  1. In a microwave-safe bowl, whisk together the flour and milk for the tangzhong. Microwave for 30 seconds, stir, and repeat until thickened.
  2. In a stand mixer bowl, combine milk, sugar, yeast, egg, flour, salt, butter, and tangzhong. Knead on medium speed for 15-20 minutes until smooth. Allow to rise until doubled in size (about 1 hour).
  3. Punch down the dough, divide into 8 pieces, shape each into a ball, and let rise for 30 minutes on a baking sheet.
  4. Melt butter for the streusel, then mix with sugar and flour until clumpy.
  5. For the cheesecake filling, blend cottage cheese, whisked egg, sugar, and vanilla until smooth.
  6. Preheat oven to 350°F (175°C). Press a cup into each bun to form a divot. Fill with cheesecake filling and strawberry jam, brush edges with egg wash, and sprinkle streusel on top.
  7. Bake for 15-20 minutes until golden. Serve warm and enjoy!

Notes

Serve warm with whipped cream or fresh strawberries. Leftovers can be stored in an airtight container for up to 2 days at room temperature or refrigerated for a week.
