- 2 cups golden sandwich cookies with vanilla filling, crushed
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup strawberry jam or preserves
- 1 teaspoon cornstarch
- 8–10 golden sandwich cookies with vanilla filling, roughly chopped or broken
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- For the crust: Mix the crushed cookies and melted butter until moistened, then press into the bottom of the pan. Bake for 10 minutes.
- In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time and mix in the vanilla extract.
- Pour the cheesecake mixture over the pre-baked crust and spread evenly.
- In a small saucepan, mix strawberry jam and cornstarch over medium heat, simmer until thickened slightly.
- Pour the strawberry topping over the cheesecake layer and swirl it gently.
- Bake for 30-35 minutes or until the center is set.
- Cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.
- Lift out of the pan using parchment paper, cut into squares and garnish with broken cookies.
Notes
For best flavor, serve chilled. Store in an airtight container in the refrigerator for up to a week.
