- 2 cups golden sandwich cookies with vanilla filling, crushed
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup strawberry jam or preserves
- 1 teaspoon cornstarch
- 8–10 golden sandwich cookies with vanilla filling, roughly chopped or broken
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
- Combine the crushed cookies and melted butter in a medium bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
- In a large bowl, beat the cream cheese and granulated sugar with an electric mixer until smooth. Beat in the eggs one at a time, then stir in the vanilla.
- Pour the cheesecake mixture over the crust and spread it evenly.
- In a small saucepan, whisk together the strawberry jam and cornstarch. Bring to a simmer and cook, stirring, until thickened. Remove from heat.
- Pour the strawberry topping over the cheesecake layer, gently swirl if desired.
- Bake for 30-35 minutes until the center is set.
- Let cool on a wire rack, then refrigerate for at least 4 hours or overnight.
- Lift out the bars and cut into squares, garnish with broken cookies before serving.
Notes
Ensure cream cheese is softened for better mixing. Chilling the bars is important for proper setting.
