  • 1 cup pureed fresh strawberries
  • 1/2 cup buttermilk
  • 1/4 cup milk
  • 2 tbsp strawberry jam or preserves (optional)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 cup fresh strawberries, pureed
  • 2 cups powdered sugar (for frosting)
  • 4 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat oil and sugar together until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract.
  4. Add strawberry puree, buttermilk, and milk, mixing until combined.
  5. Gradually add dry ingredients to wet mixture, blending gently until smooth.
  6. Divide batter evenly between pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool in pans for 10 minutes before transferring to wire racks.
  7. For icing, whip heavy cream and powdered sugar until stiff peaks form.
  8. In another bowl, beat cream cheese and butter until smooth. Add pureed strawberries and vanilla, then gradually mix in powdered sugar.
  9. Fold in whipped cream gently.
  10. Assemble the cake by placing one layer on a plate and spreading icing on top, then add the second layer and frost the entire cake.
  11. Decorate with fresh strawberries if desired.
