A delightful cheesecake that combines creamy goodness with fresh summer berries, perfect for special occasions.


Ingredients

  • 200g digestive biscuits
  • 100g melted butter
  • 500g cream cheese
  • 200ml whipping cream
  • 150g sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 100g crushed strawberries
  • 100g crushed blueberries

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the digestive biscuits and mix with melted butter until combined; press into the bottom of a springform pan to form the crust.
  3. In a bowl, beat together the cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, whipping cream, crushed strawberries, and blueberries until fully combined.
  6. Pour the filling over the crust in the pan.
  7. Bake for about 50 minutes or until edges are set but center is still slightly jiggly.
  8. Allow to cool at room temperature, then refrigerate for at least 4 hours or until completely chilled.
  9. Remove from the springform pan, slice, and serve.

Notes

Serve with extra fresh berries or a dollop of whipped cream. Can store in the fridge for up to 5 days or freeze for longer.
