- 200g digestive biscuits
- 100g melted butter
- 500g cream cheese
- 200ml whipping cream
- 150g sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 100g crushed strawberries
- 100g crushed blueberries
Instructions
- Preheat your oven to 180°C (350°F).
- Crush the digestive biscuits and mix with melted butter until combined; press into the bottom of a springform pan to form the crust.
- In a bowl, beat together the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, whipping cream, crushed strawberries, and blueberries until fully combined.
- Pour the filling over the crust in the pan.
- Bake for about 50 minutes or until edges are set but center is still slightly jiggly.
- Allow to cool at room temperature, then refrigerate for at least 4 hours or until completely chilled.
- Remove from the springform pan, slice, and serve.
Notes
Serve with extra fresh berries or a dollop of whipped cream. Can store in the fridge for up to 5 days or freeze for longer.
