- 3 – 3 1/4 cups all-purpose flour, plus more for work surface
- 1 tablespoon baking powder, aluminum-free
- 1/2 teaspoon baking soda
- 2 tablespoons granulated sugar
- 1 1/2 teaspoon fine sea salt
- 1 cup (2 sticks) unsalted butter, cold
- 1 cup whole buttermilk, cold, plus more for brushing
- 1/4 cup heavy whipping cream, cold
- 1 cup finely chopped fresh strawberries, hulled
- For the icing: 1 cup powdered sugar
- 2 tablespoons milk of choice
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Position a rack in the middle of the oven and preheat to 425°F. Line a baking sheet with parchment paper and set aside.
- In a food processor or large bowl, combine flour, baking powder, baking soda, sugar, salt, and cold butter. Pulse or mix until the butter is fully incorporated and a shaggy dough forms.
- Pour in buttermilk and cream, then gently mix in the diced strawberries until the dough comes together. If the dough is too sticky, add an additional 1/4 cup of flour.
- Lightly flour a work surface and turn out the dough. Use your palms to shape it into a cohesive mass without overworking the dough.
- Roll the dough into a 6 by 13-inch rectangle, about 1 inch thick. Use a 3-inch biscuit cutter to stamp out 12 biscuits, avoiding twisting the cutter.
- Place the biscuits onto the prepared baking sheet, spacing them 1/2 inch apart. Freeze the biscuits for at least 15 minutes while the oven preheats.
- Remove the biscuits from the freezer and brush the tops with buttermilk. Bake for 20 minutes, rotating the baking sheet halfway through, until golden brown.
- In a small bowl, mix powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over the warm biscuits.
- Serve immediately and enjoy!
