  • 1 tablespoon baking powder, aluminum-free
  • 1/2 teaspoon baking soda
  • 2 tablespoons granulated sugar

  • 1 cup whole buttermilk, cold, plus more for brushing
  • 1/4 cup heavy whipping cream, cold
  • 1 cup finely chopped fresh strawberries, hulled
  • For the icing: 1 cup powdered sugar
  • 2 tablespoons milk of choice
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Position a rack in the middle of the oven and preheat to 425°F. Line a baking sheet with parchment paper and set aside.
  2. In a food processor or large bowl, combine flour, baking powder, baking soda, sugar, salt, and cold butter. Pulse or mix until the butter is fully incorporated and a shaggy dough forms.
  3. Pour in buttermilk and cream, then gently mix in the diced strawberries until the dough comes together. If the dough is too sticky, add an additional 1/4 cup of flour.
  4. Lightly flour a work surface and turn out the dough. Use your palms to shape it into a cohesive mass without overworking the dough.
  5. Roll the dough into a 6 by 13-inch rectangle, about 1 inch thick. Use a 3-inch biscuit cutter to stamp out 12 biscuits, avoiding twisting the cutter.
  6. Place the biscuits onto the prepared baking sheet, spacing them 1/2 inch apart. Freeze the biscuits for at least 15 minutes while the oven preheats.
  7. Remove the biscuits from the freezer and brush the tops with buttermilk. Bake for 20 minutes, rotating the baking sheet halfway through, until golden brown.
  8. In a small bowl, mix powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over the warm biscuits.
  9. Serve immediately and enjoy!
