Ingredients

- 8 oz short pasta (bowtie, rotini, or penne)
- 1 cup sliced strawberries
- 1 ripe avocado, diced
- 2 cups baby spinach or arugula
- 1/4 small red onion, thinly sliced
Instructions
- Cook the pasta according to package instructions; drain and let it cool.
- In a large bowl, combine the cooked pasta, strawberries, avocado, spinach, and red onion.
- Toss gently to combine.
- Serve immediately or chill in the refrigerator before serving.
Notes
For added flavor, use a dressing of olive oil, lemon juice, salt, and pepper. Customize the salad with other fruits or cheese if desired.
