Ingredients

  • 9 graham cracker sheets, crushed
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 1 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, at room temperature
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup quartered fresh strawberries, pureed
  • 4 oz cream cheese, softened
  • 1/2 cup thinly sliced fresh strawberries
  • 1/2 cup white chocolate chips
  • 1/2 cup sweetened condensed milk

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch pan.
  2. In a bowl, mix the crushed graham crackers, melted butter, and 2 tablespoons of sugar. Press this mixture into the bottom of the prepared pan to form a crust.
  3. In another bowl, whisk together the flour, salt, and baking powder. In a large bowl, cream together the sugar and butter until fluffy. Then add the egg and vanilla extract. Gradually mix in the flour mixture and spread this dough over the graham cracker crust.
  4. Beat the cream cheese and pureed strawberries in a separate bowl until smooth. Spread this creamy mixture over the cookie dough layer.
  5. Next, sprinkle the thinly sliced strawberries and white chocolate chips on top. Drizzle the sweetened condensed milk evenly over everything.
  6. Bake in the preheated oven for about 30 minutes, or until the bars are set and golden brown. Let them cool, then refrigerate overnight for the best flavor.
  7. After chilling, slice the bars into squares and serve them cold.

Notes

These bars are best served chilled. For an extra touch, serve with whipped cream or vanilla ice cream.
