Ingredients

- 1 lb chicken breast, diced
- 2 tbsp soy sauce
- 1 tbsp sriracha
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp arrowroot powder (or cornstarch)
- 2 tbsp olive oil (divided for sautéing)
- 1 cup green beans, trimmed
- 1 cup mushrooms, sliced
- Salt to taste
- Pepper to taste
- Garlic powder to taste
Instructions
- In a hot skillet with 1 tablespoon of olive oil, cook the diced chicken until it is golden brown.
- In a bowl, whisk together the soy sauce, sriracha, honey, minced garlic, and arrowroot powder. Pour this mixture over the chicken and simmer until the sauce is thick and glossy.
- In another pan, add 1 tablespoon of olive oil and cook the sliced mushrooms with a pinch of salt and garlic powder until they are tender.
- In the same pan, sauté the green beans with a little olive oil, seasoning them to taste until just tender.
- Plate the sticky chicken along with the cooked mushrooms and green beans, and enjoy!
Notes
Serve on a bed of rice or quinoa for a heartier meal. Top with chopped green onions or sesame seeds for added flavor.
