Ingredients

  • 1 lb chicken breast, diced
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp arrowroot powder (or cornstarch)
  • 2 tbsp olive oil (divided for sautéing)
  • 1 cup green beans, trimmed
  • 1 cup mushrooms, sliced
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste

Instructions

  1. In a hot skillet with 1 tablespoon of olive oil, cook the diced chicken until it is golden brown.
  2. In a bowl, whisk together the soy sauce, sriracha, honey, minced garlic, and arrowroot powder. Pour this mixture over the chicken and simmer until the sauce is thick and glossy.
  3. In another pan, add 1 tablespoon of olive oil and cook the sliced mushrooms with a pinch of salt and garlic powder until they are tender.
  4. In the same pan, sauté the green beans with a little olive oil, seasoning them to taste until just tender.
  5. Plate the sticky chicken along with the cooked mushrooms and green beans, and enjoy!

Notes

Serve on a bed of rice or quinoa for a heartier meal. Top with chopped green onions or sesame seeds for added flavor.
