Ingredients

- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 large eggs
- 5 ripe bananas
- 1/2 tsp salt
- 1/2 cup evaporated milk
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 3/4 cup brown sugar
- Grated cheese (for topping)
Instructions
- Mash the ripe bananas until smooth in a large bowl.
- Add eggs, evaporated milk, melted butter, vanilla extract, brown sugar, and mashed bananas; mix until combined.
- Gradually fold in flour, baking soda, baking powder, and salt until just combined.
- Scoop batter into greased or lined cupcake molds, filling each about 3/4 full.
- Steam the molds over medium heat for 12-15 minutes; check doneness with a toothpick.
- Top with grated cheese while hot, let cool slightly, then serve warm.
Notes
Use very ripe bananas for the best flavor. Adjust sweetness by modifying the brown sugar.
