Ingredients

  • 2 large eggs
  • 5 ripe bananas
  • 1/2 tsp salt
  • 1/2 cup evaporated milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 3/4 cup brown sugar
  • Grated cheese (for topping)

Instructions

  1. Mash the ripe bananas until smooth in a large bowl.
  2. Add eggs, evaporated milk, melted butter, vanilla extract, brown sugar, and mashed bananas; mix until combined.
  3. Gradually fold in flour, baking soda, baking powder, and salt until just combined.
  4. Scoop batter into greased or lined cupcake molds, filling each about 3/4 full.
  5. Steam the molds over medium heat for 12-15 minutes; check doneness with a toothpick.
  6. Top with grated cheese while hot, let cool slightly, then serve warm.

Notes

Use very ripe bananas for the best flavor. Adjust sweetness by modifying the brown sugar.
