Ingredients

  • 1 flank or skirt steak
  • 2 large eggs
  • 1 cup baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Butter or oil for frying eggs

Instructions

  1. Toss the baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them on a baking tray and roast in a preheated oven at 425°F (220°C) for 20–25 minutes until they are crispy and golden.
  2. Season the steak with salt and pepper on both sides. Grill or pan-sear the steak over high heat for about 3–5 minutes on each side for a juicy flavor.
  3. In a small pan, heat butter or oil and fry the eggs sunny-side up until the whites are set but the yolks are still runny.
  4. Slice the steak against the grain into juicy pieces and arrange it with the fried eggs and crispy roasted potatoes on a plate.
  5. Serve hot with hot sauce or ketchup if desired.

Notes

For extra flavor, marinate the steak for an hour or more before cooking. Use fresh baby potatoes for the best texture and taste.
