Ingredients

- 1 ribeye or sirloin steak
- Salt & pepper to taste
- 1 tsp olive oil or butter for searing
- 3 eggs
- 1/4 cup shredded cheddar cheese
- 1 tbsp butter or olive oil
- 1 cup diced potatoes
- 1 tsp olive oil
- Garlic powder
- Paprika
- Salt & pepper
- Optional: sour cream or Greek yogurt for topping
- 1/2 ripe avocado
Instructions
- Season the steak with salt and pepper, then sear it in hot oil or butter for 3–5 minutes on each side. Let it rest, then slice it thinly.
- Toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Roast them in the oven at 425°F (220°C) for 20–25 minutes until they turn golden brown.
- Whisk the eggs with the shredded cheese in a bowl. Then, scramble them in butter over low heat until cooked through.
- Cube the avocado and sprinkle it lightly with salt.
- Assemble your plate by adding steak slices, cheesy eggs, roasted potatoes, a dollop of sour cream, and avocado chunks.
Notes
For more flavor, marinate the steak for a few hours before cooking. You can use different types of cheese, like pepper jack or feta, to change the flavor of the eggs.
