Description

A hearty breakfast dish combining juicy steak, creamy cheesy eggs, and crispy roasted potatoes.


Ingredients

  • 1 ribeye or sirloin steak
  • Salt & pepper to taste
  • 1 tsp olive oil or butter for searing
  • 3 eggs
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp butter or olive oil
  • 1 cup diced potatoes
  • 1 tsp olive oil
  • Garlic powder
  • Paprika
  • Salt & pepper
  • Optional: sour cream or Greek yogurt for topping
  • 1/2 ripe avocado

Instructions

  1. Season the steak with salt and pepper, then sear it in hot oil or butter for 3–5 minutes on each side. Let it rest, then slice it thinly.
  2. Toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Roast them in the oven at 425°F (220°C) for 20–25 minutes until they turn golden brown.
  3. Whisk the eggs with the shredded cheese in a bowl. Then, scramble them in butter over low heat until cooked through.
  4. Cube the avocado and sprinkle it lightly with salt.
  5. Assemble your plate by adding steak slices, cheesy eggs, roasted potatoes, a dollop of sour cream, and avocado chunks.

Notes

For more flavor, marinate the steak for a few hours before cooking. You can use different types of cheese, like pepper jack or feta, to change the flavor of the eggs.
