Description

A delightful lemon pound cake that combines sweetness and tartness, perfect for any time of day.


Ingredients

  • 1/2 cup of melted butter
  • 1 1/4 cups of sugar
  • 2 eggs
  • 1/3 cup of lemon juice
  • 2 tablespoons of lemon zest
  • 1 teaspoon of salt
  • 1 1/2 cups of flour
  • 1 tablespoon of baking powder
  • 1/2 cup of milk
  • Glaze sugar
  • 1 egg white
  • Lemon juice

Instructions

  1. Cream the butter with 1 cup of sugar, then add the eggs and 1 tablespoon of lemon juice.
  2. Mix in flour, salt, and baking powder, then add the milk and mix well.
  3. Pour the batter into a greased and floured mold and bake at 175 °C (350 °F) for 50 minutes or until a toothpick comes out clean. Let it cool and then unmold.
  4. Mix the remaining sugar with lemon juice and heat until dissolved. Make small holes in the cake and pour this mixture over the cake to absorb.
  5. Mix icing sugar, egg white, and lemon juice until a honey-like consistency is reached. Pour it over the cake and let it harden.

Notes

For best flavor, use fresh lemons. Allow the cake to cool completely before adding the glaze.
