A delightful lemon pound cake that combines sweetness and tartness, perfect for any time of day.
Ingredients

- 1/2 cup of melted butter
- 1 1/4 cups of sugar
- 2 eggs
- 1/3 cup of lemon juice
- 2 tablespoons of lemon zest
- 1 teaspoon of salt
- 1 1/2 cups of flour
- 1 tablespoon of baking powder
- 1/2 cup of milk
- Glaze sugar
- 1 egg white
- Lemon juice
Instructions
- Cream the butter with 1 cup of sugar, then add the eggs and 1 tablespoon of lemon juice.
- Mix in flour, salt, and baking powder, then add the milk and mix well.
- Pour the batter into a greased and floured mold and bake at 175 °C (350 °F) for 50 minutes or until a toothpick comes out clean. Let it cool and then unmold.
- Mix the remaining sugar with lemon juice and heat until dissolved. Make small holes in the cake and pour this mixture over the cake to absorb.
- Mix icing sugar, egg white, and lemon juice until a honey-like consistency is reached. Pour it over the cake and let it harden.
Notes
For best flavor, use fresh lemons. Allow the cake to cool completely before adding the glaze.
