Description

A delightful and healthy dish combining roasted sweet potatoes with a creamy, cheesy spinach filling.


Ingredients

Scale
  • 4 medium sweet potatoes, scrubbed and halved lengthwise
  • 2 tbsp olive oil (for sweet potatoes)
  • Salt & black pepper, to taste
  • 1 tbsp olive oil (for the filling)
  • 2 cloves garlic, minced
  • 4 cups fresh spinach (or 1 1/2 cups frozen, thawed and squeezed dry)
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drizzle the halved sweet potatoes with 2 tbsp of olive oil, and season with salt and pepper. Place cut side down on a baking sheet and bake for about 25-30 minutes or until tender.
  3. While the sweet potatoes are baking, heat 1 tbsp of olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant.
  4. Add the spinach and cook until wilted. If using frozen spinach, ensure it’s well-drained before adding.
  5. In a bowl, combine the cooked spinach and garlic with the ricotta cheese, Parmesan cheese, and red pepper flakes if using. Mix well.
  6. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
  7. Scoop out a bit of the flesh from each potato half and mix it into the spinach and ricotta filling.
  8. Fill each sweet potato half with the spinach and ricotta mixture.
  9. Return to the oven and bake for an additional 10-15 minutes until the filling is hot.
  10. Garnish with fresh herbs before serving.

Notes

These stuffed sweet potatoes are best served warm and can be paired with a fresh salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
