Description

A fresh and colorful salad combining spinach, sweet peaches, and crunchy pecans, perfect for a light meal or as a side dish.


Ingredients

  • 6 cups fresh baby spinach
  • 2 ripe peaches, sliced
  • 1/2 cup toasted pecans
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled goat cheese (optional)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large salad bowl, combine the baby spinach, sliced peaches, red onion, and toasted pecans.
  2. If desired, sprinkle goat cheese over the salad.
  3. In a small bowl or jar, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, salt, and pepper until well mixed.
  4. Drizzle the dressing over the salad just before serving.
  5. Toss gently to coat all ingredients and serve immediately.

Notes

Best served chilled or at room temperature. Keep the dressing separate from the salad if stored for later.
