A fresh and colorful salad combining spinach, sweet peaches, and crunchy pecans, perfect for a light meal or as a side dish.
Ingredients

- 6 cups fresh baby spinach
- 2 ripe peaches, sliced
- 1/2 cup toasted pecans
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled goat cheese (optional)
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
Instructions
- In a large salad bowl, combine the baby spinach, sliced peaches, red onion, and toasted pecans.
- If desired, sprinkle goat cheese over the salad.
- In a small bowl or jar, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, salt, and pepper until well mixed.
- Drizzle the dressing over the salad just before serving.
- Toss gently to coat all ingredients and serve immediately.
Notes
Best served chilled or at room temperature. Keep the dressing separate from the salad if stored for later.
